The beef industry is capitalizing on a tremendous improvement in beef quality, and much of that progress can be attributed to the genetics supplied by purebred breeders. These breeders study genomic data in making breeding decisions and then later evaluate carcass data to make sure they are on the right track. Recent USDA data show the portion of federally inspected cattle slaughter that grades Choice and Prime (the top two grades) has grown from 63% in 2009 to 80% in 2019 and 2020.
